Trying brandy

I have been thinking about trying my hand at some brandy so, I started grabbing a couple pounds of peaches at the grocery store for the past few weeks and putting them in the freezer. I had a 2 pound bag of pitted, dried cherries, a 1 pound bag of pitted dates, a pound of raisins and a packet of levelen ec 1118. Hydrated the cherries, dates and raisins in a gallon of water heated to 180 and left to cool for a couple of hours while I pitted the peaches. Mixed it all together with 4 additional gallons of water for a total of 5 gallons of water and an sg of 1024.
I think I'll go home and fire up my still, it might not make me feel better but, I bet it will
