Absinthe, my version.
Mostly made from home grown botanicals. Pink, not green, coz that's what we had. Wormwood is very out there, but that's ok because I liked its bite already. The louche develops to a very sexy pink as soon as iced water hits it.

I like to drink my corn lickker at 90 proof. Shot glass with 2 oz. followed buy a large swaller of bottled water. I like to feel the warmness going down then dilute it with the water once it hits the tummy.
A few of them and you best be settin down or you will be walking sideways.
It don't get no better than that.

Im drinking a snifter of Odins Easy Gin. Straight. No ice. He's right, its great straight up, better than with tonic. Its mellowing with a little age. The initial citrus is relaxing and the juniper is showing its face. Very tasty. Thoroughly enjoying this.

Take this opportunity (excuse) to pick up a bottle of Blantons. Its real nice. And the bottles are really nice to reuse for your own later. Pappy's nice too if you have a deep wallet.

Tasting a sample of my 'all feints' wash that I'm planning on putting through my pot tomorrow. I thought it would be rather unsavory, but most of it has had a good rest and it is surprisingly good except for the expected 'cardboard' aftertaste from the deep tails in some of the jars.
Many of these jars only just didn't make the final cut. There is Rum, Grappa, UJSSM corn, UJSSM rye & barley whiskey, raspberry, chocolate. The only feints left out are the herbals from absinth and gin.
There is 14l @ 43%. I won't bother cutting it first.

Ive had that experience too Chris. Pulled a jug of old bourbon feints to run with some wash and it tasted pretty damn good as is. white. It was hard to pour it back in the still. If nothing else it makes me less hesitant to keep deeper in the tails when I make whiskey cuts. Adds a nice character to a whiskey after aging up on oak.

Enjoyed a sip or three of the test jar of the center hearts of stripping run 2 of Hook Rum.
Added black swan charred oak bottle insert, a vanilla bean, a few allspice berries and a few pods of cardimum.
It is pretty smooth considering... And yummy as can be!!
Passed a nip on to my tenants and they commented on the smoothness.
Next time less cardimum and I'll add cinnamon and clove.

Some of Odin's simple cornflake whiskey, just over ice. May need a little more time to age, it's ok but I think I went a little to deep into the tails.

Sparkling red wine made from grapes picked three weeks ago.
Stolen from my brandy ferment, bottled with sugar to prime, gassed up, crash cooled to clear, disgorged and topped up with the new brandy to get 11.5%.
An entertainingly young wine that is still full of the fresh character of the grapes it was made from, best scoffed in the next couple of weeks. You won't buy anything like this at your liquor store.

well i have had slivo, it is the best, 160 proof both times i have had it, one was from czech republic and the other was from jugoslavia and it is wow! 3 shots and your done. would love to learn how they make it so delicious. my friend from jugoslavia said a plastic garbage bucket with apples and plums left to naturally ferment, until flies cover it then it's distilled. sounds gross but, apparently its the stuff, he did'nt mention yeast or anything else. or the time it takes to ferment naturally. but apparently it rots until it is a slush then they cook it.Jimbo wrote:Wow, nobody's been drinking anything since Feb 10th?
Just got home with a bottle of Serbian Slivovitz (plum brandy) brought back by a friend who goes to Serbia every year (wife is Serbian). He brought several different ones back. Some, like this one, are lightly oaked, sweet, cut well and down right delicious! Others he brought back are like sucking the bile out of a 3 week dead pigs gut. He says her village shares a potstill on a cart. Some families know their shit, others dont have the first clue. Clearly.
and yes i love that stuff.

I have a local distillary that won gold metal awards recently so I dropped money on that also. I won't mention the name cause is sucked ass. It tasted like wet grass. I am figuring it had some rye in it and the malt was not dried before using it. The oaking was not so good either.
The cuts were perfect on both bottles.

Are you loooking over my shoulder or in my window???? It does. The clear is real good. The cuts are real good and you can taste the corn in it but it has sugar in it. IMHO it is top shelf gobberment clear. Its a definate buy it. If you do let me know what you think of my advice. That being said, it is a relaxing sipping strait or with splash of water or ice. No rye or grasssy taste here. Kinda like a sweet water. 3 or 4 drinks and you will be snoozing.

Yea I tried the one you are referring to, thier opperation is pretty close to where I live as well. I just had a sip of the aged and could tell something wasn't right but I am no connisuer by no means so I couldnt put my finger on what was off about it. I tried it very shortly after they released it and attributed it to rushed oaking/aging mostly. Ill definately have to try the clear since you deem it worthy, after tasting the whiskey I wasnt sure the clear would be worth buying so I didnt order a shot. Are they close to you as well? if so you must be closer to me than I thought previously.

An experimental rum with coke.
Coke can bring out nasties when they are there, plus cover for deficiencies. This BW+molasses quicky doesn't have any nasties and the Coke makes up for the deficiencies, so it's very nice at only two hours old.
I'd nuke some, but I ran myself out of JD chips and only have dominoes left and I've never tried nuking with them.

Hah! Before dinner I decided to break out the bottles and have a mini tasting party. The wife was drinking a Paul Dolan Pinot.
I started with a small jar of the applehoneyshine I made that had been soaking with a vanilla bean and the leftover Oak insert from my spiced rum soak.
The flavors have really mellowed to the point that i actually enjoyed a nice warm sip. I also tasted the white and was not so impressed.
SO I opened a bottle of Clear Creek eau de vie pomme - 8 year aged in french oak I brought back from the distillery in Oregon... NOT my taste!! Yuk (but I am not much of a drinker lol).
Then it was off to the fresh Hook Rum bottles. The smell of molasses is heavy and the flavor is rich. Both the oaked and white smelled similar. They were both a bit harsh - so I decided to crack open my recent arrival to compare notes... lacolombe Different Drum Pennsylvania Rum. It's infused with a special coffee bean from India. He shows his trip there on the show Dangerous Grounds. The smell and taste of the Different Drum is awesome - but i can taste what I perceive to be heads in the final bottle. I know is is not aged very long - so I will let it breathe on the bar to let some of that sting burn off. The coffee infusion os not too strong. I really need to make a rum cake!
So that is it for my tasting tonight.
The highlight was my appleshine.
