LOL - probably to make it cheaper ... but I have made it with a Birdwatchers, adjusted for the quantities and ABV and it was, umm, reasonably good ... umm ... ya

Add a tablespoon or two right from the start. You won't taste the lemon a bit. It keeps everything red and maintains the sweetness. I guess its a natural preservative. In canning you use citric acid powder. Its sold in Walmart right with the jars. But using the powder can leave a hint of bitter aftertaste that the lemon does not.

I put it in the strawberries right away and in the jar afterwards too. Just a tablespoon each time. I found that after draining the initial alcohol off, I just sugar down the berries twice to drain the rest of the alcohol. Then to make the rest of the cut, I boil new strawberries and sugar, making strawberry syrup (Google strawberry syrup you can get a dozen recipes) and use that for proofing. It comes out smooth and sweet. I see a lot of people use Uncle Jesse's and stuff for this but I use the cleanest all bran double reflux distilled neutral I can make. The more neutral the liquor the smoother this will be. I could not stomach making this with white whiskey.

That will overcome the bitterness leaching from the seeds when alcohol steeping - so obvious!
+ cooking most berry fruit intensifies flavour

Yes, that's where I figured the bitter was coming from too was the seeds. It comes out good!

Ok- so I have just completed the ENTIRE thread.
A couple questions -

HAS anyone tried this at all with the watermelon? I see it mentioned a few times but never followed up on. If we're worried about the sit time/delicacy, what about soaking in strawberries or other fruit but mixing in a watermelon syrup? (Peach/watermelon maybe?)
Just thinking outloud here and looking for feedback.

Also- thru multiple posts I seem to conclude the "best" consensus is a little lemon juice at multiple stages...correct?

Lastly- there's a HUGE variance in the ABV that is used - original calls for up to 120, some people are using everclear, others say lower proof gives better flavor results... Would also your end batch size not be a consideration? i.e.- higher proof needing more blending (larger batch) to obtain a 'panty waist' :P strength drink?

Also- I've mentioned it in another thread recently too, but JIMBO--- I am a TRUE FAN of your labels!!!
I can not WAIT to have something to put one of these onto, and may reach out for a different color pair depending on the flavor I choose! :clap:

Many different fruits have been used but I don't think watermelon would have a concentrated enough flavor. Wish it did! I have used peach and had it come out good.

I have also used 195 proof to 120 proof. I think 140-150 does best. The real high proof just dissolves everything and can bring out the bad flavors. Too low is just too low..... I find that soaking too long also brings out the bitterness in the berry seeds so I just soak for two days, drain, do the sugar thing twice then cut with fresh strawberry syrup. Comes out great!

And yes I put a little lemon juice in each step. Keeps it fresh and you never taste it.

Not gonna lie- the tropical is just cuz I got a pic I want Jimbo to make the label with! ;)

After at LEAST an hour pursuing google images, I think I may have talked someone into simply posing for the pic.... All off the promise of a taste of something that is yet to be blended... Could its properties REALLY be that powerful?! :clap:

Ok- in all honesty it may be a completely staged pic where she still has shorts on and their just strategically placed at the ankles, but I mean... It makes a much better story the other way - maybe I'll post it to the liars bench one day! :P

Put these up last night and will report on my flavors: all soaking on 120 except the one denoted

From left to right:
Watermelon/mango (I know the watermelon may be hard to carry, added mango also)
Peach/mixed berry (had a little of each left over- this is on 80 proof),
Mixed Berry & Pomegranate (bought as a pre mix, color already looks AWESOME)
Peach
Tropical Blend x 2 (quart & pint) (bought pre-mixed; pineapple, strawberry, mango, & papaya)

I was intending on making SPD, after infusing the berries & going thru the process, i wondered what it would taste like on white oak. well it taste really good. & im gonna do some more just thought id share, im guessin it's around 90 pr after cutting to my taste. im sure it's prolly been done before but i haven't read it anywhere.

So I'm making a mixed berry panty dropper today. Except this time I'm cooking the syrup out of the berries that I will add to the neutral. So after I do that, I add sugar to the spent berries for pancake syrup, then drain it. Rinse repeat. On the second go I forget the berries/sugar on the stove top on low temp. An hour later it was caramelized and dark brown bubbling away.

So I took advantage of a bad situation by adding water, 3 jalapenos, and half a lemon worth of juice. Ran it through a SS filter and now I have the red meat sauce that is boss. It's thick, really spicy, and has the berry flavor. Everyone loves it!

That sounds yummy! Sometimes the best things come from would be mistakes. im gonna have to give it a go.

Love to cook me up some food, bout to go kill a couple of 12 week old cocks for chicken enchiladas tonight.

This sauce is soo good but I think it needs some smokey flavor to associate with the jalapenos. Not sure how I want to do that. Maybe some over-oaked whiskey...

Anyways here is a tip if you want to make it yourself. I didn't bother taking temperature reading of the caramelizing sugar. From the consistency I could tell it was at the soft ball stage from 235-245 degrees F. If you get it hotter than that, it will be all buggered up. So get it to 240 or so and hold it there for at least 20 minutes. Then add your other ingredients including the water, and cook till you reach the desired consistency. Filtering is optional, but has a nice visual appeal.

After I make this a dozen times with progressive tweaking, I'll post a recipe for it in the "Favorite Food Recipes" forum. I already know the title.

So here's an update:

Day 3 I poured the alcohol off the tropical and added sugar to the top
Day 4 poured off all peach and berry variants and added sugar to top
Day 7 poured of watermelon/mango and added sugar
Day 7 poured off all syrups as all sugar had devolved and reset for new syrup round

Have added lemon juice at each step this far:
Tbsp with alcohol; tsp each subsequent addition

Looking good so far!!! :)

The numbers below by the flavors are also a correction to an earlier post. The soaking proofs listed earlier were not all correct.

Left to right:
Tropical Blend (104); mixed berry & pomegranate(124); mixed berry/Pom & peach(80); peach(124); and watermelon $ mango(104)
