OD is old.....But he aint that old. Plate colmns have been around for a good long while. OD merely took a commercial application and scaled it down to the hobby size.
Clearly a good looking aestetic but further than than that,,,,,severval qualified participants within in the community recon'd this scale would not work well and further went on to conclude why it would not work well,,,,,,,lots of conjecture. So OD built it.

Welcome Aboard !
It is a pleasure to have a working distillery guy be part of our collective.
I am sure I speak for many when I say most of us are envious and would like to be in your place running our own operation. Congratulations.
That being said, I hope we can be helpful and possibly inspirational as well.
There are a lot of really smart guys here. I am humbled often.
Many have had the opportunity because of scale, to work on many different grain bills and techniques. Experimentation that larger scale operations might not be able to do.

Interesting thread and welcome. It really shows just how much combined knowledge we amateurs have. I haven't seen anything new here - not dissing the OP - as he has admitted to keeping secrets just as we do.
What I do find extraordinary is that we all claim to be trying to make better spirits than the commercial guys - yeah, I know. Before y'all start, we mean the big boys - yet when a professional bloke says the same as an amateur does, we all take notice.

We believe we can do better than they do because we don't have to worry about a profit margin, or production amount. We can also be more finicky with regards to ingredients and such, for the above reasons, and because we're on such small scales, we -can-. On a larger scale, there needs to be a larger margin. And we can cut up our stills and modify them at will if we think we can fine-tune them toward our end goal, again, because of the above reasons.
On the other hand, there's a lot of knowledge to be gained by running more volume in one day than what many of us run in a year, or 5. There's value in that knowledge!b

But, who can ever forget the last micro distiller who's ego went crazy after a while and decided to switch forums and diss the living shit out of this forum, just as some ordinary members have done and then slink back once they realise that this is where it all happens. Some folk in here will be very apprehensive for very good reasons, all brought about by the obnoxious behaviour of these turds. Sorry turds.
And of course, there is the founder of this forum, Uncle Jesse who has experience as a micro distiller and who has never displayed any egoism.

Yes, Uncle Jess is still very active here, when he gets a chance... Due to his real-life work he can't spend as much time he as he'd like, I'm sure... And with the old site being hosted from his own personal server located in his home we had a lot more down time than you have seen since he migrated to commercial hosting...
Back on topic about Micro-Distilleries... I have no problem with them whatsoever and we are actively discussing a subforum for them, and have been for some time now... My comments early on in this topic were meant to be taken as a warning that regardless of who joins these forums they are just a regular Joe when they come here... We don't treat, nor do we expect to be treated, any differently based on anything outside of these forums... That goes for micro-distilleries, product vendors, those who haven't distilled one drop yet, seasoned distillers, engineers, chemists, or anyone who doesn't fall into one of the categories mentioned... Some lauded their accomplishments to the point of being obnoxious and that is a trait that we really don't need here... Many members may lead very exciting lives, filled with accomplishments and personal gains, but that doesn't mean they should be worn on their coat sleeves here in these forums... Any ranking in these forums is based solely on overall performance within these forums which garners respect or lack thereof...
As blanikdog eluded to, we have had many new members come here who either thought they could whip us into shape or with hidden agendas that they sprung on us right up front or perhaps eased on us as time passed... Those who were questioned and were on the up and up never had any qualms about being questioned... But there have been others who have become overly defensive when questioned about their ulterior motives... So far the original poster, with the hard to remember handle, has been forthright regrading his intentions...
At this point it would be a good idea to let this topic return to its welcoming state... Any additional discussions, micro distillery related or otherwise, would be better suited for discussion in either appropriate existing or new topics...

Totally agree, I have been following this thread as it has weaved and bobbed around. I believe everyone has something to add to the forum and it is time to get back on track.

Geeze, Blanik, ease up.... I know it's hot pretty well everywhere and everyone's fuse is a bit short, but damn, man, all I stated was that UJ hadn't posted a response to a thread in years, and he hasn't. I don't for a second begrudge him for it, as he's obviously busy with a startup distillery, and still managed to host this forum out of his own home until only recently. Kudos to him, and I was one of the first to fire a bit of money his way when he finally asked for some help(and I'd offered to do so before he asked). All I stated, with regards to your comment that UJ was also a micro-distiller, was that yes, he is, but he's not active on the board.
I'm not being defensive or argumentative at all; y'all are simply mis-reading me(and others). I'm taking off on vaca for a while, and will be away from computers; hopefully everyone'll settle down and be back to themselves when I return... Geeze.

I hope we get a good review from you LWTCS. Unfortunately I think he may have been ran off at this point. Hope he has tougher skin then that and comes back.
And I like him even better after watching that video. Nice GC15K Cat Forklift.

Siesta Key Rum
Silver
Batch #4
• Price: 20 bucks plus or minus after tax. The gold rum is 25 bucks plus or minus.
• Bottle: 750ml. Good quality glass. Nice svelt shape with a tapered base.
• Cap/top: faux cork with a wood topper
• Label: Basic quality paper. Some generic product notes used are identical to the “Gold”. My bottle appeared to have a sharpie mark for the batch #. I hope that the batch # indicator is a legitimate metric.
Firstly, upon opening this bottle and smelling, it was immediately evident that 20 bucks is a really good value. All though this is a different product from my recent Martinique Clement purchase (twice the money at 40 bucks),,the Siesta Key smelled equally as good and perhaps better. A nice fruity note hits your nose immediately with very soft hints of a clean ,slightly buttery finish.
I did not detect any of what we would call Heads or Tails at all, though some may very well be present.
Tasting was equally pleasant. Very smooth and quite easy to sip. A nice velvety tongue feel, with a really nice warming feeling in the back of your tongue and throat. Not hot or spicy like pepper at all. And most certainly not rough, course or earthy like the operator was simply running and collecting.
At present I have only consumed a few ounces and can not evaluate any morning after “dues”.
This product is clean and light and has a very pleasant flavor. My immediate impression is that the tasty notes can be masked quite easily when mixed. This may not be a bad thing when trying to market to the ladies (no offence intended) and new rum drinkers.
I would have no problem recommending this rum to a stranger. Perhaps a seasoned navy rum enthusiast might find this drink far too light…..But I really enjoy’d my first sample.
