I've done birdwatchers a few times and with the tomato paste thought along the lines as you, there must be something else to keep this a cleaner wash. Like the saying goes, "garbage in garbage out". Not saying at all birdwatchers is garbage cause I do like it.
Any ideas possibly besides the vitamins and minerals to try? I'm new enough to this hobby I can't really give a good idea. But my thought is like birdwatchers and "Odins neutral neutral" there must be some essential yeast nutrients that could be substituted.
How about making a larger batch? Even if the ferment time, as is, is so slow maybe doing a batch 2-4 times the size would be the ticket. Leave the ingredients alone, that way when finally finished you have plenty to distill down.

Also....just happened to be thinking about this, but does anyone else think that the slow ferment time is helping keep the ferment free of flavors?
