possum's are pretty shy also. They actually are not too nasty (even though they have a HUGE mouth, full of nasty looking teeth). Possums are the funniest of things. A friend had his lab over last spring. The lab flushed out a possum (first I had EVERY seen here in town, but I know they are around), and was mauling the hell out of the critter (big fat possum, about 15 pounds or so). Possum was all wet with dog slobber, looked torn up, and DOA. Well, at least the dog thought so, and after a minute or so, simply gave up and found something else to do. Bout 2 minutes later, mr possum, simply rolled over back to its legs and ambled off. How about if Texas secedes and then Australia and Texas form a new nation? That has some pretty interesting possibilities...

My recipe for Chilli Galah is a little different. We use an axe head instead of a rock. Takes a little longer, but the extra wait is worth it.

We have a similar recipe for cooking carp. Put fresh carp filet on a cedar board and smoke in the smoker for 2 hours - throw away the carp and eat the board.
