The YLY never scorched. Even if it's 100% rye flour. The YL-enzymes destroy all the beta-glucans. No steam run required. But the flavor profile is so-so. One has to wait for a long time until it stops smelling like drying oil coated pine panel.

It's almost 2025 now, and I just bottled a distillate from 2019. From a completely different era, right? The lighter version is quite drinkable but not particularly interesting. The heavier one is great on the nose but rather odd on the palate. So, have blended 2/3 light with 1/3 heavy. The balance, tho :)
