strawberry panty-dropper

I’ve read about a few others who make a pineapple panty-dropper and I’m having some issues making my own. Wondering if you do anything different that helps.

I’m finding that pineapple chunks do not give up their juice easily. After a week of soaking in 92% rum, the chunks still had most all of their color to them. The initial strain gave me exactly the volume I originally put into the jar.

When I started, the pineapple chunk volume was the same as the volume of spirit I soaked them in. After 5 days of adding sugar to the fruit and draining the syrup daily, it produced less than a 1/4 of the original volume which is much lower than the volume I get from other cordials I have made.

I ended up giving the fruit a good squishing with a potato masher and I just put in a few coffee filter cones to let those drip for a few days. I’m not seeing a lot of juice coming.

I’m thinking I should just use pineapple juice next time. Any thought from you folks who have done this before? Any pineapple processing tricks to try?

Try running the pineapple chunks through a juicer like the one above.
Once that is done bottle the juice and cold crash it for a week in the fridge, you can then syphon off the cleared juice leaving any sludge behind.
I've used this method many times on similar projects.
This way you get all of the juice and any alcohol that has soaked into the fruit.

Well the verdict is out. My momma loves this stuff,and it's gone already. Gonna have to double up on the amount. She never gave up the panties easily anyway so maybe I'll be mixing double shots for her in the future.
