Looking forward to brewing soon. Really, I have most of my components ready. The hard part is going to be cleaning the garage and setting up a brewing op.

Malted corn/wheat and a touch of rye. Oaked at 62% on heavy chard no toast. Only six weeks old but not bad. I'd say its not quite top shelf, touch heavy on heads and could use a little more tails. But good.

I made a small batch of whiskey with a grain bill of 50% malted, kilned and roasted wheat, 30% corn, 15% oats and 5% rye.
Cooked with steam and mashed with enzymes at 1.5 pounds per gallon, then fermented on the grain with bakers yeast.
The stripping run was done on the grain with steam injection and the spirit run was done on the CM.
Compressed the forshots and early heads, then turned the defleg cooling water almost off for the rest of the run.
Haven't blended the cuts together yet, I'm just sampling them to decide what to do with it.
Tastes pretty good considering it's only a couple hours old.

Dogfish Head 90 Minute IPA. I'm trying to let all of my homemade sit for at least 90 days before hitting it too hard, and I don't have much left older than that. I do have some 7th gen UJ that came out of a small barrel about a year ago, but I'm saving what's left for weekend drinking until I get some more stock built up. I'll have a couple of gallons of mead ready by November and about seven gallons of Edworts Apfelwein ready by Thanksgiving, to go with some AllBran and Cornflakes that are on oak now. I'm just starting a new ferment of UJ with this years Peaches and Cream sweet corn.

White whiskey. Malted corn, malted white wheat and a touch of rye. Half the corn and wheat where smoked with corn cob. Cut to go on oak, no heads and deep into tails.

Does the smoke flavor come across very strong? My folks sometimes used corncobs mixed in with the hickory wood to smoke hams, bacon, and sausage.

I mixed one strip that was smoked with a strip that wasn't smoked and glad that I did. There is a defanant smoke flavour. The smoked strip was smoked with the cobs that the corn came from. With out mixing I believe it would have been to much but we'll see in a few months when I pull it off the oak.
