@ Cayars, I use curly green kale, never felt the need to try any other brassica. I think the people who cook the kale are the ones with the off odour issues. Minimal kale involved, it is just for micronutrients, I use 50 grams of kale for a 24 litre wash.

Dunno about others but Ive used all parts....just give it a quick whizz in the blender with a bit of water and Bobs yer uncle.

This is interesting, so please keep the thread going. Where in the wide wide world would one get Kale?? I have heard of it, but never seen it. I'm going to be interested to see how much Kale comes through. I think it slowed it a little but it's still champagne bubbling away wash is rolling from bottom to top you can see bits an pieces of the kale surfacing.

Hilcovan, I buy my kale from the green grocer section of my local Woolworths supermarket. Last week I bought a 500 gram bunch of kale for $2.27, nearly enough for six washes after removing the thickest part of the stalks

I pick mine fresh from the garden. It's good for washes but horrible to eat.

I just started a batch, it’s going good, but I felt like I needed to poke the Krausen down into the wash so the kale was actually in it instead of floating on top.
If I didn't learn the hard way, I wouldn't learn at all!

Yikes. This one is holding about 65-70 litres and I put in about a pound of kale!

Oh well, it was on sale, so those will be some well fed yeasties, and I’ll know for next time!

:lol: oops , I buy the kale when it is on sale price and freeze it in 50g samples, looking forward to hearing how the ferment and final spirit goes - you could have discovered something! “It is not a mistake, it is a learning opportunity!”

My son is growing a lot of kale and we are thinking about doing a combination of kale and beet greens. Can I ask what variety of kale you using or does it matter?

OK, I have another question after reading about kale it does look like all the varieties carry about the same nutrients. In reading one sentence grabbed my eye
Always remove the middle rib as it tends to be overly tough and fibrous and imparts a more bitter taste when eaten. Remove the rib by hand or with kitchen shears.
Did you guys remove the middle rib before blending it?

I do. I can’t always rely on getting kale when I need it. When I get a bunch of kale I bag and freeze it in 50 gram batches. I thought it would be easier to keep the batches the same if I leave out the rib. Nothing surgical or aesthetic about how I tear the blade from the ribs.

Fifty grams of kale leaf material takes up quite a bit of volume. I put it in a ziplock bag and squeeze out all the air etc before freezing it to save on freezer space

Our dogs meanwhile are begging to eat the rib material, they love it

I want to try dehydrating kale and storing it in dried pulverised form, I’ll let you know how that works.

Started my first Kale wash. I wish someone would have told me how big kale plants get, I planted eight plants and used part of one plant for an 11 gallon wash. We will see if my math conversion was correct.

Where are you getting your sugar? I am assuming Kale was grown. That seams expensive. My sugar from Wally World is $10 for 25 lb bag,

That is actually not a bad price for sugar, at Costco I spend 50 cents a pound.

Just checked out the wash after putting it in my fermentation cart yesterday and I see what Googe and FS are talking about. It smells as good as any fermentation I have done thus far. With all the Kale I have I am going to try and do another fermentation after this.

I am noticing that a lot of the kale remains floating on the surface. Thinking about scooping it out prior to siphoning it into the boiler. Is that what the rest of you that have made the kale wash do?

PS: crab cakes and kale fritters for dinner tonight!

I don’t remove the floating bits but probably should. Last stripping run I had a puke and when I investigated the lone copper scrubber in the riser was choked with bits of kale!

When doing all grain I usually siphon through a paint cloth but I was thinking the chunks of kale would clog my siphon so I think I will skim first then siphon.

Mmm you can make kale soup with it.
My family recipe uses kale, potatoes, carrots, garlic powder, soy sauce, cayenne and maybe a couple other ingredients and spices depending on the day but that's the basics. We call it collard soup because it is our family variation of portuguese collard soup but we have come to prefer kale.
