Direct Steam Injection
I'm a convert. I set up a pressure canner. I have a big all american. I took out the pressure guage and put in a needle valve and attached a few feet of 1/4" tubing. I crimped the end and drilled a bunch of holes. This end went into a 40 gallon stainless fermenter. Put a couple of gallons of water into the canner and turned it on. I was easily able to cook corn and thirty gallons of water. It took a couple of hours to get up to 200 f and takes little propane to keep it hot for hours. Cool stuff that all you struggling with all grain might want to look into.

Husker, this was just my first trial run. I heated a 10 gallon pot up a few days earlier and thought it would work well. It worked beyond my expectations in a thirty gallon mash. (my biggest ever)
Once it gets up to heat and you get a little starch conversion happening it doesn't even require stirring. It won't burn anything. The pressure cooker on a propane turkey fryer was a perfect combo. I could turn the heat up just enough to make 15 psi (250 f) steam. Before I shut it down, I got the whole damn thing to a rolling boil. Next time I get around to playing with it I'll take some pictures of the rig...

I need to get serious about looking into this. I did three five gallon batches of bourbon this weekend just to end up with about ten gallons of mash after straining out the grains. After spending about nine hours cooking mash I realize I need to find a good way to cook large quantities. This seems like the ticket.

I'm in the process of setting my boiler up for similar use.
I'm reworking my failed stripping column to use steam injection. and I'm building a steam powered mashing tub.
I've been using steam injection, for making gin, for a while now but on a much smaller scale. results are quite nice.
