Why is it that if I don't catch it within a minute or so I can no longer edit my posts? This is very frustrating.

Because editing was disabled a short while back, to preserve context with some trolling going on. It will probably be returned to 48 hours in the very near future.

Editing is back on, but again, if the need arises (shit start being slung, trolls or other stuff), it may be turned off short term.

Thanks for turning it back on. I'm terrible about not catching my spelling, or missing words, or wanting to add more clarification until after I hit submit.
