rum wash vinegar??

I started a rum wash 3 months ago, starting at 1.09 it is now 1.03 and it tastes alot like vinegar but then molasses washes taste tarty after there done. My question , how do know for sure if it is vinegar? I know ill find out when i run it, but there must be another way to test it. Thanks in advance! cheers

If it doesn't have a layer of mold on top, it shouldn't be turned.

This EXACT same thing happened to me. I made a rum wash before christmas last year and didn't get around to running it for a couple months. When I tasted it it was very dry and kinda had a vinegary quality to it. I ran the wash just for the hell of it and it wasn't what I expected. It definitely wasn't what the recipe was supposed to taste like, but it smelled like strong caramel. I saved it and ran it with some feints and the product was actually very delicious. So I'd run yours and just see what happens. :mrgreen:
