HI all , wow wot a good site, just found it by chance.
look forward to getting some info of you pro distilers, i have just made my first batch on a home made still.
early days for me but so rewarding

Well i just couldnt resist, had to get another batch on the go
A friend recomended this as a quick and easy one for making wine, ok il be putting it through the still.
rice wine or sake
6lb white rice
6lb sugar
2lb sultanas or similar
2.5 gal water
I boiled it all up and waited to cool to 20c
added lemon juice, citric acid. yeast
got an SG of 1100 yummy
been told to wait a month to do its thing ... wait and see

The sugar alone gives a potential yield of 16.9 %ABV without any conversion of the rice... That's pretty high for all but turbo yeasts which don't need nutrients... You might be better off splitting that one was into two separate 2.5 gallon washes or top up to one 5 gallon wash... That will bring down the SG and %ABV down to a safer level that the yeast can tolerate...

sorry i am not Hugh, but he does live not far from here in Dorset,
thanks for that , will dillute the wash as you say, just got up this morn and wash not moving much. smells wonderfull tho.

I never had any luck with the rice and raisin as wine. It suffered from just being too thin in flavour. I followed the C. J. J. Berry recipe.
Let me know if you have any luck with it as either wine or a spirit.
