I have been doing turbo sugar washes for a long time with success, but decided to try the UJSM recipe as I'm getting sick of the artificial sort of taste most essences have. Anyway I completed first generation and kept all spirits as feints, and used 25% backset.
Have just distilled the 2nd generation and while it smells sort of corny/ bourbony it is extremely sweet smelling and tasting. I followed the recipe exactly, except I used bakers yeast bought at the supermarket instead of distillers yeast (couldnt find any at local brew shop, which seems strange..). I had the same problem with a rum wash I tried with molasses and it was even sweeter than this run. I know these runs are supposed to be slightly sweet but even diluted to 40% it is not even close to drinkable. Any tips or ideas would be greatly appreciated. Oh and also I am refluxing and keeping between 85-70% as spirits and made many cuts, all have this sweetness. Thanks everyone for such a great forum.
