Hi all, have just done my first run, and was quite suprised. I travel to France alot a the locals out there make a spirit with just the fruit.
So made myself a stove top still , pressure cooker ltr, and condenser 6ltr to try out what i leant.
Put about 20 lb of plums ripe , stones and all in a tub , added a bit of water and left it to ferment for a month, no yeast or sugar. Strained off and put in a demi john with air lock and waited till ferment stoped. Only got about a gallon of juice tho.
Put through still , slow exit about 2-3 drops per second , threw first cup away and stopped at 90c, managed to collect a pint of full flavour brew at 35% abv.
Not a very economical way to produce a little but rewarding.
