After the spirt run?

Post by Bull Rider »

I did two stripping runs, and combined the low wines into a 3 gallon spirit run. What do you do with what's left in the still at the end of the spirit run? I haven't opened up the still left, but I'm pretty sure there's liquid left. I stopped at 55% and 202 degrees.

I'm guessing that it goes into the feints jar for the next run.

Thanks.

Thanks Old Dog.

So, should I wring it out further than 35%? Or not? I don't know how much is left in the still, probably not much.

I appreciate your help... :)

You could distill down to 20% if you want to keep some tails for your next run, but below 20% it gets a bit skanky.

Old Dog are you referring to pot still or any type still? Thanks in advance P.S.- I knew a skanky woman once!

Any still, there is still alcohol left in tails, and can be combined with heads for addition to your next distillation.

I distill down to 10% and add the feints to my next run, unless I'm doing vodka.

I run wood fired pot stills mostly, so if your using gas I would do like Old Dog and and rune to 20%.

After 20% your generally getting diminishing returns for your fuel consumption, but I think deep tails added to the next run adds a distinct flavor. Kinda like a house flavor in beer.

Thanks for the input. When your spirit run is complete, and you've run your tails out as far as you want you dump the backset that's left over?

The only exception would be if you're doing a sour mash and added a portion of the backsets into the mash?

I've been doing about 20-25% on the tails. I was just wondering how close that was to right. Didn't know if Pot Still mattered. I have read a dozen answers and was just kinda wanting a little reassurance from one of you that I know is very knowledgable.....Thanks so much.

Correct!

Backset comes from the first (stripping) run. Backset from a second (spirit) run will not have good flavour. The exception would be if your first run is a spirit run. What's left after the second run goes down the drain.
