I have a two gallon pot sill with water running thru the vertical spout. When I turn on the cooling water the temp at the top of the copper spout lowers to under 100 degrees? If I turn up the heat the cooling water gets really warm and doesn't turn the vapor into liquid. Is there a temperature I should try to keep the cooling water? What should I keep the burner on (high, med, low) Thanks in advance for your help.

If there is any distilate (alcohol) In the vapor and the temperature is below 100c (try to keep 96c max for pot still) then it will liquify through the diagonal spout. keep the water flowing, feel the diagonal spout make sure its fairly cool. You cannot really cool the vertical spout temperature because of the way a pot still is designed they are supposed to pull through flavours and some contaminants, just make sure you keep the boil under 96c. Also when inserting the thermomiter bung make sure the thermomiter glass end goes just below the pot still diagonal spout join point of the vertical tube.
