Is a double helix better than a single helix if you only have 1 water supply? I have seen them mentioned and read thier praises , but wouldnt you actually hinder the cooling process if it was just one continuous tube?

Nope, it won't hinder the cooling process. Water absorbs ALOT of energy to go from liquid at 212 F to vapor state at 212 F....on the order of 7 to 10 times ( forget the exact number) the amount of heat that is required to take the same amount of water from 32 F to 212 F.
So even though you have heated the water in your condensor up a bit it still has lots of heat capacity left to condense the vapor.
