peach liquor

i just got done making some peach liquor and was wondering how everyone else ages their peach liquor. oak chips??? more peaches???

In the past Tater has posted several wonderful recipes on this forum, including some on peaches in wich he describes how he does it. Don't know exactly where they are, but try to search the Flavouring-section.
Otherwise search the forum for posts by tater..

There are others, just search on peach. With his and others advice, my peach is by far the favorite amongst tasters. One trick I've learned is the balance between sweetness and peach flavor.

Made a special batch for an Allman Bros. show a while back, and man was it good (and they were too). Eat a peach for peace, as Duane used to say. And no, he didn't get killed by a peach truck!

this is Blueraven. Funny you mention them. I actually went out with their sister in Daytona when they were the Almond Joys.Before they moved to Macon. I was in Warner Robins, just down the road from Macon.

Do you know what type of Peach he was refering to? <G> 8)

Hey i just did a peach batch. gonna get it out of the 2 mason jars and strain. Taste more alcohol than peach but it is flavored. . I filled the jar 1/2 full with the peaches and juice and then filled to top with the shine. Prob too much shine. Anyway, its very drinkable and not harsh.

Did you use the same recipes..tater's?

That's pretty wild Blueraven. You've got some cool experinces in the music world.

I've an idea of what kind of peach he meant!! Mmm, I like them Ga. Peaches, haven't had one for many years (since I'm married and she's a Va. girl) but they sure are sweet, juicy and usually have a nice fuzz on 'em. Seem to taste better if you wash them first :twisted:

Peaches are my favorite fruit to work with for sure.Easyest to.Into my 3rd batch now.First 2 were peach washes 3rd was peaches and honey.If ya like honey ya ought to try it.Gonna charr a few peaches and use them to age the peaches and honey with. Figure 4 medium size peaches in gallon jar.In soaking peaches in my likkers and liquers ive found that if im wanting a clear finished product its best to use neterines for soakin. Fuzz is hard to filter out .I use whole fruit as well.When charring fruit I hold in tongs over gas flame trying not to break skin .I also freeze my fruit before using in washes and sometimes for soakin.Makes it lot eayser to work with.Seems to me it gives better flavor to.Made a pear liquer while back took almost 6 months for the pears to soak enough. and another 3 for the soaked sugered pears to turn to syurp.But only about a month to drink it. :wink:

I tried the soak and sugar in spirit juice extraction thing with wine-berrys, they are like a wild red raspberry but dont cluster, they look like fish roe, but taste better. Anyway, the result was extremely drinkable straight or mixed. Next summer I'll do that again, instead of wasting so many on my wine projects !

i make a peach schnapps type of drink, after i dilute the sprits down to around 40 proof , i add peach flavoring that the brew shops sells , then add suga to tatse , and the stuff taste GREAT & so much cheaper than what you but in the stores !, add a lil Orange juice & ya got yaself a hairy navel hehehhee
