Just Starting

Well , Here goes nothing. Just started to read and sort thru the topics, on still building, whisky making recipes, and etc. Enjoying Irish Whiskies mostly am leaning that way , however at 60 and a bad ticker, not sure how long I want to age anything.

Welcome, and I hope you will be successful in finding the knowledge you need. luckily there are shortcuts also with the ageing of spirits. Enjoy! Good luck!

Yes.
A potstill and perhaps start with the All Bran recipe. Get 2 or 3 of those under your belt then move on to the UJSSM recipe. Then consider your capcity for an all grain mash
With good cuts and some chared oak sticks you will get a very nice drink within a months worth of aging. Maybe not award winning but very respectable.
After that you can more easily gage how much sleep time you need to install into your own personal hand crafted best likker on the block cuz you made it yourself and you've concluded it's by far better than store bought booze.

Welcome thom. Once you get caught up in this hobby/craft tho old ticker will settle down nicely. Your accent sounds Australian, am I right?

Good to hear from you Thom.
I was thinking just like you about 4 months ago when I completed my first still. Since then I have gone through two batches of sour mash bourbon. The first one is gone, after two months, it's better than Jack Daniels, I kid you not. The second will be ready when I get home in two weeks, It should be right at a month and a half old. Thats all it takes, anything over a month is just gravy. Surprised the heck out of me.
