Let me start off by saying this site is a wonderful asset. A couple of weeks reading on here and the results of many many years of trial and error (and successes) are right there and are available to anyone who wishes to try distilling themselves. I have brewed beer for about a decade, and have always been interested in distilling spirits. (I spent my formative years growing up in bundaberg, where the most popular school excursion is to the Bundaberg Rum Distillery) Although I now live in Tropical North Queensland, (where a cold beer is the alcoholic drink of choice for most of the year). Unfortunately I found this site a week to late to stop an impulsive brewstore purchase of an essencia still however I will use it as a stepping stone with the goal of designing a still down the track. I don't drink spirits all to often, however I like the occasional gin, whiskey or rum. So my thinking is I should be able to age my rum and whiskey efforts, while I save my feints to run as a gin or neutral spirit...
While my new hobby might be on the wrong side of this countries law, I don't feel all to bad sidestepping an excise tax law. And it is the process of distilling that hooked me, This truely is chemistry with a purpose I can relate to...
