cloudy at 80 proof, but not 90????

Anybody ever run into a situation were your liquor turns cloudy at a certain proof?? (mine was exactly at 80 proof). But it remained clear at 90 proof... Did it both with the run off water from the river as well as store bought distilled water..If it was cloudy and I added some more "concentrate liquor" and it cleared up.. Is this a Ph problem. Not only that but it only does it with my Gin. The other liquors do not even have an issue with this. So I'm brain storming that the juniper berries are changing the Ph of the water?????

How are you making you gin? vapor infusion or maceration? I use the vapor infusion method with a bag of juniper berries and herbs etc hanging in the neck of my boiler, and have never had a problem.

Gin often louches (the oils precipitate out of solution) when diluted or chilled. just like absinthe. all it means is you've made a very oily (flavourful) gin. apparently different botanicals can make it more prone to louche though. In spirits without botanical oils, The most likely culprits are either tails (fusil oils) or minerals in the water.

I have a copper basket that sits above the alcohol inside the pot. I'm thinking about maybe tying a different juniper berry....

try reducing your botanicals proportional to the neutral charge. OR adding a bit of neutral at 40% to your gin - if it's oils it'll clear up.

I do the same as OD and have never had the problem either.
