Simple Mash Bourbon

Post by loneswinger »

Ok I was trying to come up with simple mash (no cook sugar+grain ferment) equivalence to all grain mash bills. For example, the famous UJSM, uses a 50/50 mixture of corn and sugar to try to replicate corn whiskey. You could do something similar with barley and rye, 50/50 mixes. For wheat you could go a different route since both wheat bran and wheat germ are readily available (and cheap when you buy it in the bulk section of the grocery). The dried grain has about the following proportions, 82% endosperm, 15% bran, 3% germ. So to imitate wheat I was thinking: 70% sugar, 20% bran, 10% germ. So to summarize:

Corn ~ 50% cracked corn/50% sugar
Wheat ~ 20% bran/10% germ/70% sugar
Barley ~ 50% cracked malted barley/50% sugar
Rye ~ 50% Rye/50% sugar

For example I was thinking of a corn/barley/wheat (50/25/25) simple mash equivalent bourbon to have the following per 7 gallons (26.5 Liters):
4 lbs. cracked corn
2 lbs. malted barley
1 lbs. wheat bran
1/2 lbs. wheat germ
9 lbs. sugar
~1.5 gallons of backset
Cost = $8
Expected Yield After Cuts = 0.7 gallons of 60% per generation (starting with 2nd generation where you already have faints)

Run it all exactly as UJSM except for the adjustment to the grain type. You guys think it is worth a go? Do you think the proportions would come out right? 6 or 7 generations in I could fill a 5 gallon carboy with 60% and age with new charred oak. Using a 10 gallon bucket to ferment, the effort would be minimal, almost unnoticeable. (my 100 L fermenter is currently busy with DWWG for vodka so the buckets are the only thing available)

Feedback appreciated,
