One of my mom and dads favorite memorys
When my grandmother met for the first time.
60 years ago, before I was born
My Italian east coast grandmother, who barely spoke English, went out on my western grandmothers lawn and started picking dandelions.
My Irish western state grandma seeing this grabbed my dad and told him she felt bad that the woman felt she needed to weed the yard.
My dad just chuckled as he knew what was coming.
When east came in the house and begin to clean the "weeds" my dad thought his mom was going to go nuts.
But when she actually made them into a salad, western g-ma had to try as not to offend her guest.
Well as my parents would tell you to see those two old lady's picking dandelions from every neighbors yard on the block for the next 2 weeks was a sight.

No goose
Just the greens and you have to pull em up with he roots wash em in cold water then snip off and toss the roots
You also have to harvest before they start to flower or they taste bitter.
Olive oil, wine vinegar slivered garlic and salt and pepper yum

A nice light splash of balsamic and a good quality extra virgin olive oil.
Sprinkle of a nice sharp rough grated (there are so many) italian cheese.
Edit:
Bread and wine requisite
