2nd distillation of apples

My potstill is 100 L, my primary product that I make is rye whiskey I usually make my mashes about 90L, so my stripping run is done and I collect and save the 1st distillation, what I usually do then is save the backset an start another fermentation and make another 90L mash, run it through the still and collect more, do another wash, strip it and then add all three stripping runs together and then make my cuts during the 2nd distillation and get my whiskey.
My question is: this year I made a mash using apples from one of my trees in the yard, fermented it then did my stripping run, I only got about 35L as SG was 1.056 I only had enough apples to do 1 mash, so I want to do the 2nd distillation:

CAN I ADD DISTILLED WATER TO IT SO IT FILLS UP MY POT WITHOUT SACRIFICING ANY OF THE FLAVOURS FROM THE APPLES? WILL THE ADDITION OF THE WATER DILUTE IT TOO MUCH? ANY SUGGESTIONS?
