running a still without a thermometer

Just wondering who out there runs without a thermometer? I built a still for someone, didn't drill the whole for the thermometer and ran it a few times to make sure it was good to go and I'm not using the thermometer at all anymore - don't need it.
Anyone else out there running without one?
