Amylase and Beano



Can you add too much amylase or too much Beano?

I am looking to try holymackerel's oatmeal whiskey recipe tomorrow, but I have the Beano pills (not drops), so if I err on the liberal side, wanted to make sure that is okay.

Plus, he said he used (I think) 1 teaspoon per gallon, and my amylase calls for 1 teaspoon per 5 gallons. (although I got the amylase from a beer supplier...would that make a difference?)

On the beano I use 3 or 4 drops per gallon .On the amylase id follow what the directions called for with maybe a little extra.I use malt myself. you cant use to much of it.As some recipes call for all malted grain.The amylase your using should be fine. Later said tater

But that's the problem...I have the pills and not the drops.

Also, with malt ...I had always heard that that doesn't have much amylase :confused: I've heard so many conflicting reports about that. Or are you saying you malt your grain?

I was gonna start a double batch of the Oat Whiskey tomorrow also...funny, that.

Just follow the directions on yer amylase bottle plus a tad bit like Tater said.

I decided after the last batch of Oat Whiskey I wasn't ever gonna use sugar in it anymore. When it's made from pure oats the yeild is smaller, but tastier and it has a consistancy almost like an extremely thin oil.

using enzymes from malt is good, but you will never get the low finishing gravities you'll get with enzymes. take it or leave it. in scotland, it's not legal to use any enzyme other than natural ones from malt in any product labeled as scotch.
