Chocolate bourbon white. It's been in the bottle for 5 months and it's tasty as. No funk. Chocolate on the nose (And a little on the tongue) along with a little fruityness. Slips down waaay too easily.

Sipping on a Knob Creek barrel pick I helped with. It is delicious!

Panty dropper (old sugar mix) made in small bourbon glass with smuckers caramel syrup and half n half with one Ice cube college chick's eat it up. Myself I'm sticking to my Bourbon!!

A ginger beer that I messed up on due to my error and my job getting in the way...again. I'm guessing it's around 13% but tastes wonderful mixed with some juice. Added 1 Hawaiian chili pepper per gal on this one, it compliments the ginger well. Probably on the hotter side for most folks, but right in the goldilocks range for me.

When visiting the tropics, I usually start making various versions of 5% ABV ginger beer by buying the ingredients on the way to my accommodation from the airport. :D

A white wine brandy on toasted oak. Very different taste than the red.(I like the red better).the white seems to have a nutty flavour.

I've just had a rum sampling session to help when choosing blends. One of them was a Cachaça made using my own sugar cane in 2014. It's never been likeable because of a strong bagasse flavor but it seemed a bit better today. I tipped all of the leftovers into one bottle thinking that the flavors will average out and the combined flavors would be somewhere between ok and excellent, but the bagasse flavor from that one sample of Cachaça has spoiled the whole bottle. :esad:

Not a big bite. It was leftovers from about six 100ml samples. Not a great loss, if a loss at all. If I can't choke it down as it is, it will disappear when included in my next Bundy strip.

I'm drinking a neutral (tffv). Mixed with some free elderflower syrup. Not bad at all

What a difference a day makes! To my surprise, the next day, me with a clean palate and the jar with O2 for a few hours, the bagasse flavor tasted much milder. It's ok as a sipper on it's own and should make a fine addition to blends, (which I do sample first. :D)

A nearly three year old rum that was made out of stockfood molasses that was many years old before it was given to me, maybe over a decade going by the label and price on the container. A very nice sipper.

Dihydrogen monoxide (DHMO). It seems to satisfy my thirst, while keeping my bladder fully functional. The taste is somewhat “benign”, but quite tolerable. Some prefer it “on the rocks”, but “neat” works just the same.

Currently sipping on this seasons apple pie. Tasty. Added Vanilla, nutmeg, clove and Allspice in addition to the normal cinnamon this time around. loving the extra character the additional spices bring. At 20% it’s going down smooth.

I'm having trouble aging anything that I make......about 3 weeks into it, it's gone.....Moonshine, Bourbon, Rum.....you name it, it's gone....:)

Gordon's London Dry in a G&T in honor of Queen Elizabeth because it was her favorite gin. I haven't tasted it for years, it's quite nice. Nowhere near as robust as the gins made in my shed though :D

Cucumber sandwiches for lunch. The first time I've ever made them, very nice.

Obtainium Light Whiskey, aged ~15 years in a used barrel, bottled at 67.8% ABV. 99% corn, 1% barley mash bill.
First time trying a light whiskey, didn't know what to expect, but it's unique and really good!

Koval oat whiskey that I picked up on a trip up to chicago. I am working on some honey bear bourbon and putting oats in it based on recommendations for mouth feel and wanted to see what a 100% oat would taste like.

It’s unique to me. Some notes of chocolate and nuts. Coating mouth feel. Kinda interesting. Might try a small batch myself one day.

UJSSM with 6 months on oak in a Corny. I put it in at 120p but took the rubber o-ring off to allow some slow evaporation (hopefully similar to a barrel) and wow! I can definitely tell I made good cuts because I didn't need to proof down for drinking. I believe this was Gen 4 and Gen 5 combined for aging (about 4.5 gallons when it went in). Still got a bit of bite on it, but it's light-years better than some of my first stuff!

I spent most of last night hanging with friends, drinking some Clinton rum aged on raw apple, neat. Through the night I was adding small increments of honey to the rum, looking for the right amount to just barely notice the sweet honey and not loose the other notes. I think the sweet spot for me was about 2.5% honey. Yes, it clouded up a little with the honey but it was a nice taste.
