sugar vs. brown sugar wash

I am new to this so i have a few questions...
If a recipe calls for sugar, can brown sugar replace it at the same weight?

And I found this recipe for a 5 gallon wash tell me what you think
-12lbs of Brown sugar
-1/2 cup of honey
-water
-5 teaspoons of yeast nutrients
-Superstart distillers yeast

How much of the distillers yeast should I put in?

you will have a light rum depending how you distill.

ok thanks. and when you say a "light" rum, do you mean i could add more brown sugar to make it stronger? I just dont want to add too much sugar

I think you could leave out the 1/2 cup of honey from the wash as it won't impart any additional flavor, will only marginally increase the amount of sugar, but might slow fermentation... Honey, depending on what pollen it was made from, can substantially slow or kill yeast... But that small of an amount probably wouldn't... But it won't be beneficial either... You'd be better off adding it into the distilled and aged rum at bottling time if you are looking for that flavor component...

Thank you. do you know where i can find a good recipe of what to add to the distilled alcohol to make a good flavored rum?

You posted this while I was sidetracked during my last reply...

More sugar just increases the amount of alcohol by volume, or ABV, of the wash... If you want more rum flavor, a dark rum, you should use unsulphured molasses in place of sugar... We have more than a few good rum recipes in the Tried and True Recipe forum... Take the time to determine what you want and how to make it before going much further...
