molassis

how long dose it normally take to ferment molassis my last two bashes have gone 4 and 5 weeks i like rum but this seem a littel slow i use two gal molassis 20 lb sugar.3 tbl spoons distillers yeast makes about 13 or 14 gal wash am i doing something wrong?

most of my batches of 4G take about 3 weeks to ferment and a week to clear.

What temp is your wash? My rum wash generally only takes a week with ~15% potential alc (molasses and sugar), at about 70F/21C. I use 20g EC-1118 per 20L wash. And I don't use a starter. Maybe you should try making a starter, I'm going to try it as well. Good luck.

I use a starter maybe its the yeast any body else use distillers yeast on rum.maybe i need to try the 1118 duno.going to sour mash when malt is ready :wink:

I have only used ec 1118 and bakers yeast for rum. I prefer the bakers, and keeping the potential down to 10 to 12 % abv. It finishes fermenting in about 2 weeks at room temp. (68F or so) The 1118 takes longer to finish for me for some reason. I haven't tried the distillers yeast yet. I just got some for the whiskey I'll be starting next week.

ec 1118 can be a FAST fermenter if you over-pitch it, make sure it has air in the beginning, and has plenty of nutrients&acids.

I have seen it work off like a turbo.
1 packet in a 5 gallon wash will take a while...3-5 packets takes off and keeps strong till done.

Makes sense. I used 1 pack for a five gallon wash at 12% potential. It was slow going. I didn't like the taste of the 1118 rum as much as the bakers either. Maybe I'll try it again. I still have 5 or 6 packs of it in the fridge.

maybe i need to try the bakers next rum wash id have to order the 1118 i have bakers and distillers.Im going to try a sour mash next though something i dont a month to cook.but i have 15 gal molassis mite wate till the weather gets hotter.want be long nites are still cool here could have a littel bet to do with it. thank for the input guys.
