Depends on the kind of wash you got.
Never follow good whiskey with water, unless you're out of good whiskey!!!

Hi Gang: I've had turbo washes sit around for 2-3 weeks until I gould get to them, just keep in a cool, dark place. ...BJJB

I had some sugar wash last winter that sat for 6-8 weeks before I ran it. But temperatures were cold right around the freezing level.

Is it being implied that the alcohol will, after some time, no longer be alcohol. I might be wrong but i think that wine will last for decades.

I think Enlikil is worried about the wash going bad if he doesn't distill it soon after it is finished fermenting.

I've usually tried to run mine right after they are done but now am learning to give them another stir and wait some more. You get some more hooch for your effort IMHO.

there was a recent post about turbo yeast reabsorbing some diacetyl if it rests for a while after the sugar is used up...

Might be a good thing...

sure it won't hurt.

You might be better off decanting it off the sediment if you want to leave it for a long time - wines & beers will taint if left sitting on the crap for to long but I don't know that would affect a distillate. At a high alcohol content, the wash should keep as well as any wine would.

I've never cared about the time between fermenting and distilling. right now, I've 65l that's finished fermenting months ago, I don't think I'll have any problems

I was making a still so I made a 20L mash just over a year ago. The still leaked and I decided to stop trying. 2 months ago, I built a smaller, simpler pot still and the first thing I distilled was my 10 month old mash.
...It still got me drunk.
