Stainless potstill

HI everybody,
I plan to build a potstill, but I'm still at the "read as much as you can " step. BUt a question raised in my mind, and I can't find an answer on the parent site or the forum.
As I understood, only stainless and copper can be used to build a potstill. As my knowledge in handling copper is allmost inexistant, I wondered if i could build an entire potstill in stainless? Moreover stainless is cheaper.
I've not seen many pictures of "stainless potstill", Maybe there is a reason that i don't see for not using it.
