Which one of these 4 is the better yeast....confused!

Hi all,
I am about to break away from the turbos and try the birdwatchers tomatoe paste wash and dont know what yeast to use.
There are 4 diff ones available near me in bulk 1-2 lb packs for around $5.
Just a bit confused as to what to use, "Instant yeast, Quick Rise instant yeast, Active dry yeast" ??

Are they all the same or is one better than the other, or should i be looking for something else?

also , How much do i put in a 25L wash ??

There is so much info on yeast you can go cross-eyed reading all the technical stuff........the pics are of slight variations of bakers yeast, I use regular old red star dry active.........

Really there are three main catergories we are concerned with

Bakers yeast
Brewers yeast
Distillers yeast

Each has it's place......... from what I understand....

I use the red star activities dry yeast. With great results. Have used fleshmans with same results. But any of those should work fine.

I would use the 'active' and not the instant, but that is just me. All of the active I have used up to this point (red-star and fleshmanns) has turned out well. As for the 'instant', I would think it is some other faster multiplying yeast. It 'may be good, and since it is only a few dollars a pound, someone else may want to check it out. But for me, the active is what I want.

the "instant" or quick rise" is the same yeast,it has more "live" yeast so it works faster in bread.

Active Dry Yeast...

Check the others and you'll likely find other ingredients like ascorbic acid which serves a dual purpose... It causes faster CO2 production but is also intended to stop CO2 production after a predetermined period of time when used for making dough... It is not used as a preservative as has been referred to elsewhere...

I use the fleischmanns Instant dry yeast and have had stellar results fermenting sugar washes :thumbup:

I just used Redstar fresh cake yeast with a 10.5abv wash. Turned out pretty good, better that Safale 04 british ale with the same mash bill. Bread yeast is suppose to be less tolerant of higher alcohol but for my whiskey it works just fine. I'll probably try it in a rum next, thats how confident I am in it. I pitched at 95' too. If that that dont stress the yeast Im down with that.

This is from red star----The difference between the two yeasts is the particle size. The instant yeast is sold to consumers as RED STAR Quick Rise and RED STAR Bread Machine Yeast. The instant yeast is a 'fast rising' yeast, and is dried to a smaller particle than the 'regular' Active Dry Yeast, hence they activate faster and subsequently raise the dough faster.
