Stuck Ferment?

Stuck Ferment?

Good and bad ferments this last week. I juiced a gallon of grapes and added enough sugar wash to get 5 gallons at 1.070. I added a packet of EC1118 and a good spoonful of regular yeast and let it set out overnight for about 6-7 hours. When I awoke the wash had good activity with yeast producing large bubbles atop the wash. I topped the bucket and a bubbler and went away for a few days. There has been no activity since. The bubbler is unmoved. I waited another day without activity. Last night I took the top off to see, and there was movement with the yeast, so I let it set out open overnight and the C02 smell filled the house. I topped it off again and the bubbler is still not moving (releasing the CO2 from the wash). The bubbler is working fine, properly filled ... but the CO2 isn't enough to exit to bucket. Do I need more grapes or something else to get this going? Stuck? Help.

The same time I did a raspberry wash (1 gallon) with sugar wash and tomato paste added (1 can) to get 5 gallons at 1.080. It is bubbling like a son-of-a-gun! Looking forward to getting it completed as these are my first fruit washes. I have strawberry, kiwi, and apples awaiting. I have oranges too but not sure how much (and what) to bring the acidity down.
