I searched for other threads that talked about peach wine, but they were mostly talking about making peach wine, or peach brandy from a peach mash. I'm starting with 5 gallons of peach wine (15 ABV). I racked off the top as there was some residue in the bottom inch of the carboy.
Here's my plan and questions - please comment as much as you want, you won't hurt my feelings:
Heating it up slow, in case any residue made it over.
Run it through my flute, but not much reflux... like a pot still - want to bring a lot of the peach flavor over.
Not sure if there will be much in the way of foreshots, but will toss the first 100 ml's anyway.
I'm assuming there will still be heads, hearts, and tails, will collect in a bunch of jars through the run.
Wondering if there will be smaller amount of heads and tails since I'm starting from wine.
I'll do a search on how to make peach brandy once the run is complete...
*But if you have a good recipe that's not on here, I'm all ears.
Thanks for your insight.
