Hey folks, I just got back from a tour of the distillery. They use malt and 1056 American yeast. I tasted Hopquilla, Gin, Rum and Whiskey. All were very tasty. They have No 7 copper pot still with a thumper, the seventh legal still after prohibition. They found it in a barn, bought it, reconditioned it, and are producing great products. Its steam heated. The distiller was raised on a blueberry farm in holland michigan, homebrewed and now distilling. They also make some great beer, Dragons Milk Russian Imperial Stout aged in bourbon barrels.

Very cool pics, I think I need to start cisiting my local distilleries and snapping pics and asking questions. Sounds like a good time!

Oh, one of the things he said was his wash was cleaner than most micro distilleries and therefore made a better product. ???? I dunno about that. This got me to thinking about sugars, maltose, fructose, sucrose, glucose. Distillate from a maltose wash, beer, does seems to be a smoother for some reason, or was it the 1728 scotch ale yeast I used, or was it the 75' fermenting temp. They use 1056 american ale yeast. Another thing he said was they buy GNS and redistill it. He claims it picks up flavor from the still.???? How much? He picked up on me and said I seemed know a bit about distilling. I just gave him a wink.

I don't understand that statement; seems to me if they buy GNS, dilute it and run it though the still they would end up with a even more neutral product. The only way this makes sense is they make their gin this way and add a gin basket to the still somewhere.

Yes I have a new appreciation for gin now and good vodka. All their products are great except the hopquila which is just good, a distilled beer which then gets infused with hops.

I understood that it is a white whiskey that is then dry hopped. Is that not the case? I liked it a lot, but for different reasons than "it tasted great". It's more of a cool application/process that you don't see too much in spirits. If you compare it to dry hopping beer, beer has only ~6-8% alcohol to extract the hop oils. When you dry hop with ~90+% alcohol, the extraction is more efficient and you get a lot more of the oils out. Very interesting to sip it along with a beer to compare hop profiles.
