HELP Peach recipe and info needed FAST

AHHH,
I picked about 75 lbs of peaACHES sUNDAY AND THEY ARE rrIIPPEE AND GOING TO BAD FAST. Can someone post a beach shine recipe and tell me if I need to tos the brown ones or is some "Rough stuff" OK for Peach shine. Hate to waste this stuff. I have a 30 gallon stainless pot I can ferment these in.
