1. That's really up to your taste buds. Most people do 2-3 runs with a pot still, but some do one run depending on what they are distilling.
2. By cuts, do you mean 'making cuts' while you are distilling, or 'cutting' it with water when you are done? If you mean 'making cuts' while you are distilling, then they answer is absolutely yes. If you mean cutting it with water when its been distilled, well, then that's up to you. Usually spirit is watered down to ~60%ABV for aging, and then again watered down to 40-50% ABV for drinking. I suppose its about what tastes best for you and your spirit.
The last batch of rum i ran through my pot still turned out awsome. I only ran it through once. I ran the still at about 600ml/hr. I tested abv for each 100ml that came out, and collected from 85% down to 60% for an averrage of 70%. Then i aged it for 2 weeks with heavy tosted oak chips. Got to tell you it was damn good. I probably left a lot of liquer in the pot but i'm adding it back to the next batch so i'll get it out eventually.
