gonna do apple brandy need recipes guys, help!

Post by greatlakesltnin »

hi guys.. yes i have looked at taters brandy recipes..they look nice!! im wonedering if anyone else has any good ones also..going to shoot for a bushel sized batch. i have a 55 gal fermenter so size isnt a issue, however....its getting cold at night and im afraid of a stuck fermentation, and wasting a big batch..i have a garage and blankets.. will this help? how about yeast? ive been using redstar cuvee, which seems to work ok, this morning it was abt 50 degrees F and i still had bubbles working on the last of my corn mash, and that was outside..i figure if i can get a few nice days that are warm, and fermentation really kicks hard that i can keep some heat in. obviously i cant put this barrell inside.. it would not go well next to the tv!!!! outside temps during the day have been abt 65-75 degrees or better..depends on the day.. please people.. i need advice..ive got alot of buddies drooling over the prospect of a pint or two,not to mention myself..thanks!!!! by the way..what apples are best? i know that ones with hi sugar content are best, but damned if i know which ones.
