My parents have an orange tree on their property that is loaded with oranges. They will be ripe in a few weeks after the first frost we get. I figure that it has probably 50-100 gallons of oranges on it that are mine for the taking. I'm looking for a recipe to use them in but I didn't want to just zest them into another spirit. I was hoping to ferment them into a rum or brandy. I'd have to do something to adjust the PH, and I do have a few gallons of feed molasses I could include in the recipe too for a rum of sorts.
Any suggestions? I have 15 and 30 gallon fermenters and can do batches in that size range.

15 gal keg with internal heat. 36"x 1.5" head. 2gal thumper. and a Graham condenser.
