First run of Apple Brandy

Hello All,I have seven gallons of Apple cider that has been fermenting for the last two weeks,ferment went well and is starting to clear/settle.I want to run this in my pot still and make a apple brandy(hopefully).This is my first run of apple wash,I have read about excissive methanol in a apple wash,is there any thing elese unique to a apple wash I should be aware of,or any tips you may have?Dont want to ruin my first attempt by doing/not doing something needed. Thanks for your time and help,will post how it turs out.
