I bought a pint of that no cook enzyme to play with to see if I could convert my cracked corn to sugar without cooking. Test 1: I placed 1/2 cup of cracked corn in a small container with a cup of water, added 2-3 drops of the no cook enzyme to the container and stirred. I let it sit for a week stirring occasionally. At he end of the week it had no sweetness to it at all and tasted really sour. Test 1 - FAIL.
Test 2: I am trying the same test but this time I boiled the cracked corn for an hour to extract the starches. I will post next week the results.
Has anybody else used the no cook enzyme yet?
