Hi. I use a Clawhammer five gallon copper pot still. I started out using the Clawhammer one gallon. I've done about 30 runs. I have only used one recipe as yet: 86% corn; 14% malted barley; champagne yeast. Water comes from stone-lined dug well. I've tried freeze stripping. I think it removes some of the flavor, so I do not do this any more. So far only single distillations. Goals are to do an all corn whiskey; a whiskey with rye in place of barley as malt; and to experiment with other ideas. I am most interested in a corn whiskey (and perhaps a rye) which closely replicates nineteenth century product. I have studied the parent site's information several times through. This is a fine forum.

Just a note if you didn't know from Kyle, the guy who produces these stills:

"Scrubbers increase the purity of the spirit as it moves up through the column. This takes the place of a thumper on a traditional pot still. They're also critically important for removing sulfur from the distillate. You'll end up with a much smoother product if you use it. Thanks. I did know about packing, but I haven't done it yet. I intend to before my next distillation.
