A finish on the topic title would have been nice.
But what do you need a still for backpacking for? You would need at the very least a gallon pot. And still that wouldn't be enough to get a decent drink. Then even if you carried a still with you. What are you going to do about fermenting. Carry a gallon jug around while it ferments? Wouldn't clear very good getting carried around.
Unless you were going to stay in one spot for a week or so. Not real sure why you would try it. Be much easier to distill it at home and carry the alcohol instead of all the equipment.

Why not do your distilling at home?

If I were you I would make a boka or something similar. make yourself some neutral at 96% or whiskey at 80% and water it down when you want a drink. a small water bottle filter would allow you to use spring water and not carry so much with ya. just my thoughts.

My friend and I used to back-pack a lot and take whisky with us. When we got to where we were going, we would sit around drinking it and complain about the extra pounds we had to carry, ..... then joke around about how we should have packed in Bud Lite instead and saved on the weight.
