Time

I'm sure this subject has been posted on thousands of times before but -
Just recently tried a bottle of double distilled raw spirit I distilled about 18 months ago.
The difference between the spirit now and then is absolutely amazing.

For some reason this one bottle of spirit was not only ordinary it was just..... unpalateable.
Smelt lovely, tasted like crap.
Because I wasn't distilling for the past year it got to sit and mellow and mature.
Nothing was done to it except left to sit in a dark cupboard.

Was looking for a bottle of spirit to add to some oak chunks and thought of this one because it was the worst one I had.
Well not any longer....

Time
It has been said before and now I have definitely experienced it.
Time can make soooo much difference even with a pretty poor bottle of spirit.

No matter how long I do this ..... even when I stop :D I'm still learning about distilling... what a top hobby.

The way I have left it for so long is simple.
You make so much that you can't possibly drink it all. :twisted: :twisted:

That and I've been losing a bit of weight... hence less spirit drinking. :thumbdown:

Still have plenty of booze to consume and give away, but this Maillard Reaction has set my mind thinkin'
Might have to start up again and see if I can get some flavour out of that damned UJSSM
