Best recipies that only use natural yeast!!!

What are some good recipies for some corn likker that does not use yeast and only uses the natural yeasts from the corn?
I have been wanting to try basically an all natural corn likker and also.... what's yalls take on using bread yeast vs. a wine or ale yeast, taste wise...
