mashing and fermenting

hello, i have been doing this now for about 6 months now, so really a beginner! i'm wanting a good bourbon my bill was 70 corn 10 rye 20 barley tenn whiskey yeast from white labs
i have been lautering my wort, after i distilled and put in a 1 liter barrel for about 2.5 3 weeks and it came out pretty good though it tasted like more of a scotch than boubon,
will the flavor come out of the barrell more full if i ferment with the grains in. any help would be appreciated.

both fermenting on the grain and distilling on the grain increases flavor.

when a mash has been put in the fermentation vessel, should it be stirred? This is an all grain mash. How ofter do I stir...Kittra
