Flavoring finished product????

I have read in here about adding flavor to finished product. Haven't tried it yet but plan to. Here is what I plan to do and let me know if any of you have tried it or something similar . I have some Oaked UJSSM it has ok flavor nice color. What I would like to do is take a quart of white dawg, add vanilla bean pepper corns and what ever other hint of flavors I would like in it. Just let it sit in the dawg awhile till it gets good and strong in flavor. To keep it consistant I suppose you would have to remove the spices once it hits its peak. Then add desired amount to finished product. I don't mean add a half a cup or any thing. Like teaspoon or tablespoon to a bottle.... Just enough to notice it. Let me know what you may do.

I did similar with a variety of herbs and spices. Soaked about a tablespoon of each in 100ml 70% white dog. The best of all is star anise. A tablespoon of the star anise likker to a bottle imparts a nice flavor.
Soak each spice in a separate bottle and mix and match afterwards. Mixing the spices before soaking, they leach differently and some will overpower the others.
