CM still packing

I wanted to show you all my still head so that I could ask a few questions about packing and cooling lines.

First, here she is:

First question; I plan on running the cooling lines so that cool water goes into the bottom(down stream side) side of the liebig condenser(not pictured), out of the top of the product condenser then into the top(downstream side) of the reflux winding, then out through a needle valve at the bottom of the reflux coil. Is this the correct order?

Next topic, Packing; I would like to make neutral once in a while, but I will spend most of my time distilling flavored spirits in two runs. Whiskey in particular. I would like to be able to occasionally run single run spirits for washed that are too expensive to run twice. For flavored spirits, would I be better off packing the whole column and controlling the smear with heat/cooling, or pack with 3 or 4 scrubbers spaced throughout the column? It would be very convenient to just fully pack the column, and leave it that way and vary the smear by the flow rate. Is this a reasonable strategy?
